Crunchy Poppy Seed Chicken Salad
This is easy and perfect for the summer heat. You can easily substitute sliced Almonds or Peanuts for the Cashews. Also, you can substitute chopped canned chicken for the chicken breast cuts. You can also use the remainder of a roasted chicken from a previous meal in this recipe.
This recipe serves 4 and is easily doubled for a picnic or gathering.
4 cups Broccoli Slaw ~ found in the bagged / prepared salad section of most grocery stores
2 large Red Peppers, thinly sliced (about 2 cups)
4 carrots, shredded (about 2 cups)
1 8-oz can Pineapple Tidbits, drained
1 package (6 oz.) Oven Roasted Chicken Breast Cuts
1/2 cup Creamy Poppy Seed Dressing
1/4 cup Cashews
Combine all ingredients, except dressing and cashews, in a large bowl.
Add the dressing and toss to coat.
Sprinkle with cashews just before serving.
Strawberry & Chicken Salad
This has been a favorite of my family's for years. It is great for using up leftover chicken out of the refrigerator. It's simple and cool, so it is great for those nights when you are running late from work or are just tired from the heat of HOTATLANTA in the summer. This is also a great recipe to make with the kids/grandkids. The chicken can be torn instead of cut and the rest is easy for the kids to help put together the meal.
1 10-oz. package Romaine salad greens
1 6-oz. package Oven Roasted Chicken Breast Cuts
1 15-oz. can Mandarin Orange segments, drained
2 cups sliced Strawberries
1/2 medium Onion, sliced
1/2 cup Sliced Almonds
1/2 cup Creamy Poppy Seed Dressing
Toss romaine in a large bowl with chicken cuts, oranges, strawberries and onion.
Sprinkle with almonds
Serve with dressing. Makes 4 servings.
